Hard to believe as it may seem, but modern day Scotland is still a wild place .

Prehaps one of the last wild places left in Western Europe .

As i sit here connected to the world wide web ,electric ,oil, gas lines .Gps and sat nav .It is easy to feel that we are in a tame envoirnment .

The chanterelles pictured above are as plentliful (if you know where to look today as a hundred years past ).

The beauty of cooking with foods that grow wild, apart from the act of keeping the tradition alive, is how well they go with other wild ingredients .

For example deer will regularly eat wild fungi.

Serve this venison with some Morels and you have a beautiful balanced dish .

Sorrel and salmon .

wild mints  and lamb .

These ingredients co-exist in nature with each other and marry well on a plate too!!
